“Panini” Is Just a Fancy Word for Grilled Cheese Sandwich

Some number of years ago, I want to say at least 20 but probably more, my folks gave me a waffle iron. (If I remember correctly, my mom may even have purchased it with Green Stamps.)


I’ve used it from time to time over the years to make waffles. When I was a kid, my mom would also use hers to make grilled cheese sandwiches. The plates were reversible, with one side for making waffles and the other side flat.

I don’t make waffles much these days. They’re kind of a production, especially for just two people. Also, they’re awfully carby.

So, the waffle iron sits lonely and neglected in the back of the cupboard.

Until today.

Several days ago — and I don’t know what made me conceive of the idea — it occurred to me that I could use it to make panini. Or something very similar, the only difference being that it wouldn’t have the stripy grill marks that genuine panini have.


So today for lunch I made myself a ham-pepperjack-bacon-pesto panini.
